Ingredients
- 500g chicken, cut into chunks
- 200g yogurt
- 200g coconut milk
- 2 jalapenos
- 1 large onion
- 2 large garlic cloves
- 2 tbsp ketchup
- 1.5 tbsp curry powder
- 1 tsp cinnamon
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp ginger
- 1 bay leaf
- 1 tbsp lemon juice
Method
- Cut the chicken into 1cm wide chunks. Set it aside for now.
- Dice onions, garlic, and peppers.
- Fry them in a pan for a couple minutes, then add the bay leaf and all the spices. Not the ketchup though, that's not a spice.
- Fry them a bit more. The air should be delicious but slightly difficult to breathe at this point.
- Add the chicken in. Let it brown for a minute. You're not aiming to cook it all the way through, just let it brown a bit.
- Add the coconut milk, the yogurt, and the ketchup. Turn the heat down relatively low and let that mess simmer for about 20 minutes.
- If you haven't made rice yet, now would be a good time to start. You have 20 minutes and rice takes maybe 15.
- Take the bay leaf out and pour the lemon juice in. Let it simmer like that for about five minutes more.
